Five seconds for the photo. Ten to eat. Nori has about a 15-second window before it loses its crunch, and the crunch is honestly the best part. That's why every roll is made and handed to you on the spot. It's also why we don't do takeaway.
A5 wagyu, toro, Hokkaido scallop, caviar, Scottish salmon. The nori is first-crop Ariake, which is the highest grade you can get. Sushi rice is kept at 36°C. We're particular about this stuff because you can taste the difference.
We dry-age our own fish, grow our own herbs, and make our own plum wine. Nothing gets outsourced. If it's on the menu, it was made here.
